That was actually partly taken from the piano version. Liszt probably thought that the piano version is too pianistic for the organ. So he didn't entirely make it up.
Now, i know you're very jealous. But that must be very hard for you that you cannot play such an organ ... He can, you see, and for a lot of years ... :)
Why would I want to play at St Eustache? - It's a bastard-child instrument with an old wheezy drunken french mother and a dutch father that smells of elderberries and Gouda, and apparently doesn't know how to scale or regulate mixtures. There aren't even a good set of reeds in that organ. Oh but wait - Guillou consulted . . go figure . . No, sorry biblsoz, Notre Dame has "only" 110 stops and 151 ranks but as the keyboards have 56 keys and the pedal 30 (Cavaillé-Coll division) and 32 (Boisseau division) the organ has less pipes than St Eustache (around 7500)
Interessant wäre der Vergleich zwischen der Orgelfassung an einer historischen Orgel, der Fassung für Klavier solo und der Fassung des großen Meisters - ich schätze Jean Guillou sehr und bin ihm dankbar für all die Anregungen, die ich von ihm erhalten habe.

The order of the biggest organs in paris goes like this:
St. Eustach (biggest organ in France I think)
Notre Dame de Paris.
St. Sulpice.
I am 99.99999....% sure of this.
