  • You all need to calm down about "it isn't goulash! BLAH BLAH BLAH!" If you actually listened to Jamie in the video, nowhere does he say it is a goulash. He says stew yes, but not goulash...jeez.

  • it's a disgrace I think, it's more like a hotpot or casserole, don't know what oregano and marjoram are doing there..we surely wouldn't put that in it in Hungary :-S But we must accept that people all around the world make their own versions..They eat goulash in poland, slovakia, russia etc. and in all countries they prepare it different..:-/ They of course claim they know how to prepare it..:-D I tried them all, and must tell U that the genuine Hungarian version is the best! ;-)

  • This is a wonderful modern translation of the traditional Hungarian "gulyas" by Jamie Oliver. However it's not an authentic gulyas, but thats the point. As a Hungarian and as a cook I'm proud that our traditional dish can influence other chefs around the world. (without killing gulyas with honey, jam, fruit or any other improper ingredients.) I could picture this dish with our traditional "nokedli" (small homemade dumpling) but that tender pork and that delicious sauce are crying out for rice

    I'd like to close the argument where does the goulash come from.

    Everybody sais in middle east europe that the goulash is our. One thin, only one thing. The meaning of the word.

    does "goulas" mean anything in english or any slavik language? I guess no. It is only a name.

    But in hungarian (original word is gulyas) it has a meaning. gulyas (goulash), this is "herd". cow herd, lots of cows.

  • I'm American and I don't think anyone here knows what Goulash actually means. Basically anything remotely hungarian with lots of paprika is often lumped in and called "Goulash." Regardless, this looks delish, whatever it's called.

  • this is wrong!! this is more like lecso from hungary. my grandmum was a chef in budapest for 30 years. a proper goulash or gulyas is.. sweet hungarian paprika and onion and crushed caraway seeds parsnips and carrots and potato and lamb or pork i will post my one soon. all my friends have had mine and they love it!! sorry jamie i love your cooking but this dish is wrong!!

  • Thats no goulash... Im from Hungary, and this is one of the traditional Hungarian dishes, supposed to be a quite thick soup with chopped, cooked meat, no damn rice in it... its a nice dish but its not a goulash

  • @tfowler20 You're right, this isn't traditional goulash. But it is inspired by it, which is what Jamie was going for here. It probably isn't as spicy or sour as Hungarian goulash either, but it has a similar flavor profile. And it's great in Winter :) Of course, if you are Hungarian don't bother with this. Eat some real goulash!! Yum!

  • lucky for you but unfortunately the reality of london life is most people live in flats with no access to gardens.

    As a single man buying wholesale is not an option - i would need a massive deep freezer for a start

    Besides i don't know where you are from but you just can't go into Smithfield meat market here in london for example and say you want £30 of steak as it's it's trade only

  • he dosen't use cheap bits. he might use the cheaper cut of meat from an expensive animal but he never uses affordable cheap ingredients (you know, the ones pumped full of water and (for example) pork that smells of piss when cooked)

  • Anglosaxons have absolutely no idea of the true nature of goulash. Goulash made of pork is not goulash. Goulash is always made of beef. Cow, cattle, not pig. That's pörkölt. Why does he put the meat in one piece into the pot? Holy crap, vinegar? Jamie, please stop making goulash, cook something else. This is terrible.

  • Yeah as much as I like oliver, he did this absolutely wrong. Im from Bosnia and that goulash is a common meal around...

    I didnt know it was hungarian meal though, god stuff from Hungaria nevertheless :D.

    And yes, you use beef and beef only! No pork, chicken, veal and what not!

    3rd Peppers? Never heard of them in Goulash

    Perhaps is Jamie's personal contribute: worth to try next time. 2/3 hours cooking: that is absolutely allrigh.

  • sooooo... first of all: this is NOT a gulash... to get that part streight (you might say it's a sort of Satarash, but definitely NOT a gulash)...and yes, I'd know cause I live nearby and my granny and my mom passed over their family receipt onto me and it's f*****g amazing - and I've been doing it for years and this is not it. And NO, you can't say: it's an australian gulash - that would be like saying: dog is really a cat (in australia :S - than which one is it?! a dog or a cat?!)

    The original si from hungaria but are different type's of gulyas. Austrian way, romania way even in hungaria I so different types.

  • It's basically just a spicy pork roast. typical southern dish with a bit of a cajun twist with the cayan pepper. i cook this once in a while when guests come over for dinner. I like to serve it with long grain brown rice though.

  • I love being born and rasied southern because we have the best of 3 countrys culinary history with french, spanish and latin. makes for a lot of pork dishes with spicy flavors.

  • It looks like a piece of pork shoulder (boston butt) that has been boned. When doing long braises and stews like this I prefer bone-in cuts, I feel they give better flavor.

  • I ahve to say it's definately not the Hungarian style goulsh (or how we write and say "gulyás"), it's simply a very good meat food. Because of the onion and the peppers, I would say, it's more like a "lecsó", which is a vegetable stew, like for example ratatouille in the French cuisine.

  • Once he plated the pork and the rice, I thought he was done. Then he added the sour cream. Then he threw some more sauce on top of it. It was so dramatic.
