  • I DON'T WANT TO INCUR THE WRATH OF THE CRAZY YOUTUBERS. However, I am almost positive this will not result in fully hard-boiled eggs. My family makes deviled eggs and for them to come out dry enough you literally have to boil them at a rolling boil for eleven minutes. This recipe isn't for hard-boiled eggs, it's for firmer soft-boiled eggs.

  • @rchl7 if you put the salt in before it boils, the water comes to a boil slower. if you add salt while its boiling, the water "explodes" and looks like its boiling faster. do some fucking research. i just want to know why anyone would want eggs to boil slower...its a waste of time. you idiot.

  • That's because the cold water draws heat out of the egg. If you cook something to the level of done-ness that you want, then the residual heat will do what's called "carry over cooking," where the item continues to cook even though it's off the flame, out of the oven, etc.

    For example with steak; cook to 165 internal, by the time it's rested, plated & served, it'll be 170-175 internal and too well done for most. Cook it rare and let it rest, it'll carry over to med rare. Same with eggs.

  • I'm sorry you were not able to make hard-boiled eggs. The method I described works very well for me and other people I know who eat large amounts (5-10/day) of egg whites.

    You could also try shelling them directly from the hot water, while running them under cold tap water. That's probably the easiest, the shells come off like butter, but you have to have tough fingers. It won't burn but it can hurt a little. Mind over matter; if you don't mind it doesn't matter.

  • If the shell sticks to the white, take the eggs out of the pan 12 to 15 minutes after turning the heat off, crack them and plunge them in cold water. After a minute or two take them out and peel them. The temperature change will separate the whites from the shells.

  • Great video.... A) the salt is not for the cooking, it's because the salt reacts with the shell's proteins to make it easier to crack. B) Once you turn the stove off, you could time it exactly to 17 minutes, don't wait for the water to get cold. After 17 minutes, immediately immerse the eggs in cold water to stop further cooking.

  • I made my eggs like this and they turned out perfect. The only thing is it took the eggs forever to cool. If you want them quick I would do it happycampers way... but if you want to make them for the week this works great... thanks Bethenny! Love ya!

  • This is for TWO eggs.....will not work for a dozen unless it is a much larger volume of water

    Keep it simple - a dozen eggs - 2 inches of water over top - a tsp of baking soda. Boil hard for 12-14 minutes. Place in sink and cool quick with cold water - let water run until eggs are cold.

  • In Europe we actually have egg cookers, which is both neat and a bit funny to me as an American girl. However the old fashioned way you're taught to prepare a boiled egg here is quicker. You simply puncture the end of your egg with a needle or safety pin, making a small hole and being careful not to crack (obviously the thinner the needle the better). Drop egg into boiling water for 7 minutes. Lift out with a spoon and run under cold for 20 seconds. It will peel easily.

Yes, bring to a boil, take off heat, but, let stand ONLY 15-18 mins depending on size of eggs etc. Then, to keep them from getting that yucky green sulfur film 'round yolk, immerse in ice water after the 15-18 mins! Also, for easier to peel eggs, don't use very fresh eggs. Test them beforehand by immersing them in water, if they remain on their sides, they are too fresh and will be hard to peel, if they start to stand on end that's good peeling. (if completely float, trash'em)
