ya but if you take them out of the pot after maybe 10-15 min after u switch the heat off it will make pealing a snap i coulda peeled 5 eggs using the cold water method in the time it took her to peel that one those eggs she pretty much cooked the shell to the egg but boiled eggs are the bomb anyway and alittle seasoning salt omg *drools* HAPPY EASTER! xD
That's because the cold water draws heat out of the egg. If you cook something to the level of done-ness that you want, then the residual heat will do what's called "carry over cooking," where the item continues to cook even though it's off the flame, out of the oven, etc.
For example with steak; cook to 165 internal, by the time it's rested, plated & served, it'll be 170-175 internal and too well done for most. Cook it rare and let it rest, it'll carry over to med rare. Same with eggs.
The trick is getting the membrane to stick to the inside of the shell rather than the outside of the egg white. I usually dunk the eggs directly into ice water after boiling to stop the cooking process (so they don't carryover and over cook), and to shrink the white. Then a 10-second dunk into hot water to expand the shell, which pulls the membrane up off the white, making it a snap to peel. Maybe 5/6 times it works haha.
I'm sorry you were not able to make hard-boiled eggs. The method I described works very well for me and other people I know who eat large amounts (5-10/day) of egg whites.
You could also try shelling them directly from the hot water, while running them under cold tap water. That's probably the easiest, the shells come off like butter, but you have to have tough fingers. It won't burn but it can hurt a little. Mind over matter; if you don't mind it doesn't matter.
If the shell sticks to the white, take the eggs out of the pan 12 to 15 minutes after turning the heat off, crack them and plunge them in cold water. After a minute or two take them out and peel them. The temperature change will separate the whites from the shells.

B) Once you turn the stove off, you could time it exactly to 17 minutes, don't wait for the water to get cold. After 17 minutes, immediately immerse the eggs in cold water to stop further cooking.

In Europe we actually have egg cookers, which is both neat and a bit funny to me as an American girl. However the old fashioned way you're taught to prepare a boiled egg here is quicker. You simply puncture the end of your egg with a needle or safety pin, making a small hole and being careful not to crack (obviously the thinner the needle the better). Drop egg into boiling water for 7 minutes. Lift out with a spoon and run under cold for 20 seconds. It will peel easily.

Test them beforehand by immersing them in water, if they remain on their sides, they are too fresh and will be hard to peel, if they start to stand on end that's good peeling. Hmmm-Rachael Ray's how-to was better w/this one, because she says exactly how long you should wait after the eggs boil before peeling them (10 minutes). And alos, srinse them in cold water so they'll peel easier/

Bethenny your egg is not done, thats why you cant peel it, without tons of little shells coming off with parts of the egg. You need to boil the egg for 5 minutes, then let stand for another 10 and your good.

this is absolutely not how to cook hard boiled eggs eggs.For the right way go to YouTube and watch Jacques Pepin demonstrate the perfect method.Your eggs,with the grey-green tinge is the trapped sulpher on the edge of the yolk...WRONG!!!!Can't believe you haven't learned this.

Bethany, this doesn't work. I tried it and the eggs were not cooked all the way - something isn't right with this way of boiling eggs. I love you though! You are darling and I love your personality. If I ever get depressed, I watch you on video and you lift my spirits. Bless you!

In Europe we actually have egg cookers, which is both neat and a bit funny to me as an American girl. However the old fashioned way you're taught to prepare a boiled egg here is quicker. You simply puncture the end of your egg with a needle or safety pin, making a small hole and being careful not to crack (obviously the thinner the needle the better). Drop egg into boiling water for 7 minutes. Lift out with a spoon and run under cold for 20 seconds. It will peel easily.

hot girl is kinda dumb. watch Tony D'Angelos vid. he will explane it MUCH better. oh, and bethanny, salt DOES NOT make anything cook faster. salt is a mineral, used to alter and enrich the taste of food. very salty water will retain heat longer than water with no salt but not significantly.

Disagree Bethenny. Yes, bring to a boil, take off heat, but, let stand ONLY 15-18 mins depending on size of eggs etc. Then, to keep them from getting that yucky green sulfur film 'round yolk, immerse in ice water after the 15-18 mins! Also, for easier to peel eggs, don't use very fresh eggs. Test them beforehand by immersing them in water, if they remain on their sides, they are too fresh and will be hard to peel, if they start to stand on end that's good peeling. (if completely float, trash'em)
