Because he was seeking attention, like when he said "I'll make them talk to me" - because all the other housemates stopped talking to him that evening after the argument between him and Lisa, and then him and Lea. He knew they would find the food and realise it was him that had done it - I'm sure if he really meant for the food to disappear, he would have tried to chuck it over the garden wall. Also, as far as I can see, he only chose non-perishable food to go into the garden.
