Hi, I think that the trick is to use a blend with some degree of robusta beans in it. At least 30% is needed in my case. It's also necessary to grind rather fine, I use a rancilio rocky and vary the settings between 5-8 depending on the humidity. It took me very long time to get the result I wanted, but now it tastes like in southern Italy. Very nice in my opinion.
I use the Molinari red to get a taste of southern Italy, rather burnt in taste. Their bags with all arabica beans is much more elegant, sometimes a god thing....sometimes not.
