Hey you are right about the SODA on the box...it should have been marked CREAM for N2O !!! But I've heard Alton Brown say on Iron Chef "Oh Iron Chef Morimoto is making a foam that must be a CO2 canister that he is using to make the foam" I don't know why he says that...he should know better.
You can buy Liquid Nitrogen (LN2) at a welding supply store or look in the Yellow Pages under "Bulk Gas". I think that the price of LN2 is about $2/liter but you have to store it in a DEWAR as a Thermos Bottle just won't do. You can read more about Liquid Nitrogen and Dewars on Wikipedia. Remember if you can't tell the person that you buy if from that you know how to use it safely, you may not be able to buy it.

The relativ atom mass is to handel with (g/mol=x*10^-36) for the exactly molecularmass and so the exactly ratio.
Example: The molecular mass divide by the number of atoms and then to ratiomasses you want.
