@ChiChiMooglet In knife fighting usually hand switching can be a means of trying to trick or deceive your opponent.  Leon's a professional, so could just be trying to read or test Krauser's movement. It works out since he catches him with that cut across the chest. Leon also does it correctly, he doesn't overtly switches in the middle of the fight, but he seamlessly transfers it so he isn't open.

He did it right as he spun too, so Krauser would probably think the knife was still in his left hand. So when Leon spun he would be watching his left hand more than his right.

Krauser is working for Wesker (who is an ex Umbrella worker). He planned to buy Saddlers trust by kidnapping Ashley so that he could steal his sample of La Plagas and bring it to Wesker. As for his history with Leon, I know nothing about that but when you examine Krausers body after you kill him Leon says: "Krauser! What happened to you? You used to be a good guy"

krauser and leon worked together during the incident in south america operation javier but krauser was persumed dead but he wasnt he joined forces with wesker and wesker sent him to spy on the cult group then wesker later sent ada too by the time krauser was somehow infected with the virus. him tryin to kill leon means he knows leon would interfere with his mission so he tried to take him out but tht didnt work so good
