The Final Five created the skin jobs. Daniel Graystone created the centurions. The Zoe you're seeing is her memory patterns uploaded into a holographic type computer. Daniel wants to make a human looking robot to download her replicated consciousness. The skin jobs aren't copies of people. At some point, Daniel turns back to creating the metallic cylons. Why was this tech abandoned? That's the question. She's not a real "skin job" per se. Mostly it's a virtual copy.
