great recipe. throw a pinch of sugar in the dressing for nice tangy flavor

This recipe works great. I didn't have cilantro, but it was really good without it. You can pretty much forget about adjusting the seasoning on the dressing, though, because it's so acidic your tongue goes numb once you taste it. So you have to just go on faith (and it's delicious when mixed with the other ingredients).

I made this for my office potluck and everyone loved it. Slight variation, I put some cilantro while blending the dressing..and also added garbanzo beans and chopped green pepper
