Every single piece of this trick is carefully set up so it ends in that effect. When he does it the first time notice the deep breath before the 'punch'. He does this behind the guy and that plus the sound of his clothes is enough to trick him into feeling the 'punch'.

The conscious mind relies heavily on the 5 senses whereas the subconscious mind (which is what NLP targets) need not rely only on the 5 senses.
