I made this today for a BDay dinner. Its in the oven now and the aroma is so good I wish it was done now. I made it using your methods and ingredients. I used seasoning salt that had most of your seasonings in it. Mine did not look as nice as your roux did, probably because mine had speckles from the seared meat in it. I'd love to find a pan like you had. Garage Sale maybyBrought my iphone into the kitchen and watched this video as I made it though. Practice makes perfect. I tasted gravy yummy

I've been living in Taiwan for the last 8 years and recently Costco has started to carry toward from New Zealand. Out of all the foods I miss eating, pot roast is number one. I watched a lot of pot roast videos but youts looked the best! I'm no chef but I think I can do what you said to. Thanks for the great video!

@whimberly1 That is so great! I told you you'd like it. LOL It's hard to describe just how delicious it is. It's a great technique that you can use so many ways. Just think of the possibilities. How about stew? You can brown your stew meat just like we did the roast. Remove it, make the roux based gravy, and add the meat back...cook for a while...then add the veggies. Delicious! Is there a reason you don't use a cast iron Dutch oven? I have always seared the roast, then quickly poured in like a 1/3 cup red wine vinegar (has to be the red wine kind) before slapping the lid on to let the acid break down the meat for a few, then add the water and whack it in that standard "medium" oven for yadda yadda yadda, yuo know the rest. So just wondering why you don't use cast iron. Any reason or is it one of those "just cuz" kinda thangs? Brightest blessings!.
@AnnBearForFreedom I'm sure it would be fine. I guess, subconsciously I was concerned about using salt and acid (vinegar) in my cast iron skillet. Just like I don't cook spaghetti sauce in cast iron or any other heavily tomatoed dishes. (tomatoed - I made up that word...LOL) The experts say, it's alright to cook acidic food in well seasoned cast iron as long as they are never stored in it.

@GrammyTammi Oh, for sure send pics! I'd love to see them. I don't like the way most people cook a roast either. They're usually stringy, dry and take a great deal of chewing to get them to go down! This roast just melts in your mouth.

@manicbuyer The great part about this gravy is there is no raw flour taste like when you thicken a gravy with cornstarch or flour at the end of the cooking process. This gravy has baked for 2 1/2 -3 hours. It is rich and full of body. You won't believe the depth of flavor.
