For a perfect Sazerac I would use the Absente or the Grande Absente, which is very close from the original recipes. And that's what the most famous mixologists do.
A "perfect" Sazerac using Pernod absinthe? Impossible. If it were the old school Pernod Fils, then hell yeah, but the stuff they make today is drek. Jade Nouvelle-Orleans is a much better choice. It's roughly based on the old Herbsaint recipe. That's not the type of glass I'd use for a Sazerac either.
And if you're making simple syrup, which I agree works best, use Demerara cane sugar.
IMO, I am in possession of "THEE" best Sazerac recipe on the planet.

Look for a Sazerac video made by Robert Hess (aka Drink Boy), from the Small Screen Network. I recommend Thomas H Handy Sazerac Rye, if you can find it, and now use Meadow of Love (not N-O) for the absinthe. If you want my recipe I'd be happy to copy & paste it to you in a message.
