Because it's a processed food product, it also requires the flavor to be adjusted in order to maintain a uniform flavor. This is accomplished by adding lime oil that has been extracted from the peel. I hope this clarifies your question.
To save time, and to keep your hands from smelling like marinade (particularly if you're working with a really strong marinade), you don't need to work the meat with your hands. Just tossing and gently kneading or massaging the meat using a nice pair of aluminum or stainless steel tongs will actually you the same result; the meat will still be seasoned perfectly.
Oh, and for added flavor, add a bit of tequila (or just beer) during the marinading process for extra tender meat. ;-)
Really am glad I found this, Betty. I came over from Carol Fitzgerald's video for making guacomole, BTW. I think you do a good job, maybe some glaves for touching the meat would be nice touch, but the presentation was good! (Food prep gloves are available at Sam's for about $10 for 1000 gloves and they are handy at home!!!)
@conseler I meant GLOVES (Food prep gloves, available 500 per box). Also, instead of dropping strips piecemeal into the hot oil, might I suggest using a rubber spatula, to get every bit of goody in the bowl and ALSO adds some distance between the hand and the splattering (for safety's sake).

Another great video. Betty, how do you think this recipe would work with skirt steak? I know it's best for the grill and that's what I intended to do, but I've been sick and probably shouldn't be out in the cold.(Usually I grill rain or shine). I think you could use skirt steak without a problem. Be sure to slice against the grain, and you might want to add some tenderizer (no MSG) to insure tenderness. Thanks for your question!

I eat the foods I like, just not too much of anything that has a lot of calories. For example, if I want a slice of rich chocolate cake, I may first eat an entire large apple, and then I have just a little sliver of the cake. I feel full and satisfied. I keep it always in my mind and do it consistently. I also work out 4 times a week and have a positive attitude!

Miss Betty.. All I can say is WOW!!! This took me about an hour to make..The marinade gave the meat and extra kick.. Working sometimes doest give me the time to make home cooked meals..
