Make sure you beat them in very well before adding another egg. It tends to get lumpy if you add them at the same time, or, if you don't beat them in very well.
Also, mix with a wooden spoon and after each egg, beat really really fast and hard. Do not transfer the mixture to a piping bag until it is completely smooth.
@jenniferleeyt Try baking them on a silver baking sheet, as it deflects heat away and black tends to direct heat towards. I think that will help a lot. Also, make sure to line the baking sheet with parchment paper. Make sure the butter is completely melted and the salt and sugar is dissolved completely. When adding in the flour, either pour fast, or pour slow and mix very fast over low heat. That should break the clumps up.
See, the first bake essentially colors them, so if they are colored enough, you can stop. The second bake is to make sure the insides are dry and crisp.
Another tip... when you add eggs to the batter, make sure to cool it a bit before adding the eggs so they puff easier. Our house was kind of cool so the batter cooled fast in the pan. I should have mentioned that!
I made HUGE coconut ones with coconut whipped cream the very first time I made them, and I took them to my in-laws. they LOVED them! What I would do is cook them for less time for the first bake and see how it turns out. Just fiddle with the time. As long as they are puffed and golden, they should be done and you can take them out. Also, what are you baking them on? It definitely will be gooey but if it's not like mine, you may have to add another 1-2 eggs.
