@boeing521 Its not a Mustang so its okay :D. You can be any car in the game, cop, sports car, fire truck, etc. You can also do these types of missions in any of the vehicles.
@boeing521 Oh yeah, there are plenty of those. You can also hop into a random cop car and certain cars will be marked, you can get into a chase with those marked cars too.
