Well this was real close to the original...need 2 oz of GOOD RUM! Barcardi? 17yo Jamaican rum was used in the original. El Dorado 12, Rhum Barbancourt 5 Star, Appleton Estate 12, Mount Gay extra old would all be awesome choices. and rock candy syrup was in the original, but now a days it is omitted :( And thanks for not mucking it up with all kinds of juices and grenadine.
Much nicer version than most of the others on youtube, but Bacardi? How about som nice demerara rum instead? Bristol has a really nice demerara rum from Guyana. try that Myles.
@wotg Bacardi 8 Anos is actually quite a nice medium bodied rum, especially for the price. I agree on using a more heavy bodied rum in a mai tai though. *This* mai tai that Myles is making however might be way better suited to introduce rum newbies to this divine spirit compared to one made with heavy jamaican or demerara rum.
@Avarax169 Right. Bacardi rums are usually "for tourists only" but the Bacardi 8 y.o. is surprisingly good and a good value, which is important if you're making Mai Tais for a crowd and don't want to use up your Zacapa or El Dorado 21 (or Ibis, or DePaz, or...)
You can put black rhum on the top, with a spoon, so you can see two layers...Tastes better, and looks better (ya gotta shake before drinking, for sure)

Im not sure but isn't there Pineapple and Orangejuice in a ma tai and ive learned that a mai tai should be poured in in a wineglass. Garnished with a pinappleflag :)
I agree with the pineapple juice but not too sure about the orange juice. Where I work its, 25ml white rum, 25ml dark rum, 12.5ml cointreau, 75ml pineapple juice and a dash of angostura bitters. Strained into chilled martini glass or crushed ice filled rocks glass pending whether you are serving lady or gent.
My rums of choice are either a mix of 30 ml Appleton Estate Extra 12 years and 30 ml Saint James Royal Ambre or pure 60 ml of Long Pond Distillery Trelawny, a vintage rum from 1993. With 106 proof, it will strike your taste buds like a bomb with deep molasses flavours, then dry fruitiness and then cacao and coffee aromas in the superlong finish. What a Mai Tai. Too bad the Long Pond stocks are limited.
I'm not trying to show off but I'm trying to suggest good rums for a good Mai Tai and those two are my favorites. If I wanted to show off, I wouldn't choose rums that go for "only" around 20€ per bottle. It's the internet, after all :)
The only real quibble I have is that the original Trader Vic's mai-tai called not for cane syrup, but for "rock candy" syrup which is a vanilla-infused simple syrup. As re. the choice of rum, while it's probably the best approximation of the original to use a combination of aged dark and gold rums, using Bacardi 8 yields a surprisingly good mai-tai. Not optimal, perhaps, but nonetheless tasty.
That is not true as far as my knowledge goes. Rock candy syrup is an oversaturated sugar syrup that tends to form sugar crystals which is described as rock candy. Its taste leans a bit towards honey, although there's only sugar in it. It sweetens the Mai Tai without having to add too much water to dilute it. The approximate sugar to water ratio for a stable rock candy syrup that will not form crystals is 5 to 1. When making rock candy syrup, I like to add some rum to make it perfect for Mai Tais
There is some argument as to what the original rock candy syrup was. You could go with a supersaturated (that 5:1 sounds about right) and get it to "invert" so its flavors go in that honey direction. The other school of thought is to go for a 2:1 syrup flavored with vanilla.
Now, to experiment. (The things I do for science...)
Do not under any circumstances use Bacardi or any white rum in this drink. Always use dark rum, preferably Jamaican like Appleton Extra or V/X. Try mixing Appleton Extra half and half with an aged Rhum Agriole for the ultimate approximation of the 17 year old J Wray & Nephew used in the original recipe.
here in germany where i live, a lot of bars (actually, every bar i had one in yet), uses pineapple and/or orange juice to stretch the cocktail. what a shame. 10ml of fruit juice can be ok but most use like 60ml of 'em which degrades the drink to "just another tropical ladykiller"
I know what you mean, I work in a poser of a cocktail bar in a family restaurant and our Mai Tai is Bacardi white rum 25ml, Triple Sec 12.5ml, Pineapple juice at some amount I never measure it cos I know roughly how much and then some Grenadine to make it kinda red-ish. I'm counting the days until I can move out to London and work in a better bar... after I take IBC offered by these Shaker guys! xD

Watching your videos is like watching a bullet pointed list of how to make cocktails.

Alternative "Mai Tai"
1 oz White Rum
1 oz Dark Rum
1/2 oz Amaretto
1 oz Cointreau
Orange Juice
Pineapple Juice
1/2 oz Blue Curacao
Shake all the ingridients expect from the Blue Curacao
Fill a Highball glass with ice, strain the drink and pour on top the Blue Curacao. Garnice with a maraschino cherry

I have come to the point of which I think is the perfect Mai Tai recipe:
6 cl Aged Jamaican Rum (Appleton Estate 12 years)
3 cl Fresh lime juice
1.5 cl Cointreau
1.5 cl Almond syrup
It is not 100% identic to the original Trader Vic's recipe but I prefer this one over the (very similar) original.
