  • Manjula aunty...don't know why but while mixing sugar my paneer dough almost got melted & so I added more paneer to it which made the consistency a little better but still it's not forming in dough form as shown in your video....plz advise on how can I handle this now ASAP...thank you...

    Paneer should be cooked on very low heat otherwise sugar will make paneer very soft.

  • hi aunty help required.. i tried making sandesh, but i guess i cooked the paneer little more its become crumpy... what do I do now .. please help :(((Please reply as soon as possible...

  • Well being a bengali never made sandesh before at home as in calcutta u get it in every lane.. howver planing to make it ths week, but I will be using vanilla essence to make it vanilla sandesh... in calcutta in normal sandesh they do not put pineapple, however it will be gud as well, I guess:)

  • I dont use vineger but try slowley 2 spoons at a time.

  • yes you can use vinegar. I use vinegar and it works.

    My question is, after you have completed these, do they need to be refrigerated?

    Also, could one use dried pineapple? I was wondering to send my sister via the UPS or other. What do you think?

  • FYI Aunty belongs to the Jain faith. It is very similar to Buddhism. They do not cook with any eggs, meat as they are great believers in non violence and purity plus they also do not consume any onions or garlic. That is why all her videos are completely free of these items. It is really great for all the vegetarians out there, I must say. I must thank her website for a lot of wonderful recipes.

  • If you watch manjula didi's videos you would know by now that she presents only vegetarian recipes SANS -- eggs, garlic and onions -- this is akin to her belief and value systems and I for one am sure glad that she posts these valuable videos.

  • Lots of people grow pineapples in their gardens in India.

  • I really didn't know .. that's interesting to me. I looked up 'pineapple' on Wikipedia to learn about its origins and see how it might have been introduced to India. Not much luck - it is native to Brazil and Paraguay. From those countries it spread to the Caribbean, and Columbus brought it back to Europe. Maybe pineapple is a British colonial influence. I guess all that matters these days is that it tastes delicious in recipes like these. :)

  • the word for pineapple in hindi is 'ananas' which is the same as that in many european (latin) languages. it couldve been brought to india via the portugese or others before the british...

  • I don't think it would work. It has to be actual milk so it curdles when you add acid. Soy milk, for example, might look like milk, but it's really just soy-bean juice. It doesn't have the casein to create curds.

  • I've made buttermilk with soymilk and it definitely curdles...

  • To put it simply, no. Paneer is made from the milk solids, the curd, after it seperates from the water content of the milk, the whey. Soy, almond, oat milk is just the essence of the grain or legume soaked in water.

  • soy milk will curdle with nigari -- what results is known as TOFU -- here is your substitute for paneer -- be warned, though, that you will never get a real "sandesh" taste as with milk. Other "milks" you have mentioned almond, hemp, oat ..etc will NOT break into curds and whey.
