You catch em with a small but sturdy net before they dig back in the sand after a wave washes up the beach and exposes them as it recedes, but you have to be fast, they are quick diggers. Actually they quite good to eat...WHOLE..., wash em and pull off the two bigger front digging claws roll em in a frying batter or fish-fry and throw em in the skillet for about 2 minutes. The shells are very thin so they crunch like a french-fry.
