  • ummm, Shaun, I cure my own meat, which I raise and butcher. If it doesn't contain nitrates and nitrites it's not cured, and botulinium will kill you a hell of a lot faster than copd.

  • @pasomare1 Salt doesn't count as a nitrite IIRC. Humans have been salt curing meats for thousands of years.  Until only recently there were no nitrates in cured meats. Nitrates are faster so large commercial operations in the USA love them. So what if nitrates cause cancer? Don't get me started on hydrogynated fats. Real lard is healthier than butter, hydrogynated lard doesn't metabolize and causes cholesterol plaque.

  • These people better be told where to get off. I swear My whole family has lived into there 80's and 90's some even into the 100's and everyone of them cured there own meats. they canned, they hunted, and fished, cooked with cast Iron, on a wood burning stove. These doctors can Kiss my Glock, I'm sick and tired of being told what I can and cannot eat, whether or not i can defend myself and most of all that I cant pray anywhere I want !!!!!   • Too bad they are promoting old data. There is a lot of newer scientific research which shows very different things. This is one of those classic fear and uncertainty mongering stories that lumps everything together and throws the baby out with the bath water. Sure, don't live on nitrates but some bacon or ham isn't going to hurt you. Moderation in all things and enjoy life.

Beets, celery, eggplant, lettuce, radishes, spinach, and collard and turnip greens contain nitrates that convert naturally into nitrites in your stomach—where some of the nitrites combine with amines to form nitrosamines, some of which are known carcinogens. This natural chemical reaction presents no known problems for a healthy adult.

  • anytime I see a doctor or an "expert with a white coat" talking about something AMERICANS and THE REST OF THE WORLD has eaten for centuries, I just chalk it up to gov't regs.

  • why is it that they didn't mention that these harmful chemicals are added to processed "cured" food by companies? Real cured meat doesn't have these harmful additives, and is extremely healthy. No wonder why Americans are so unhealthy, we're so uneducated on food. I'm American, so im not bashing, but people need to wake up and get back to eating real food. Cured meat is healthy, unless its produced by kraft or phillip morris.

  • @shaunmason220 cured meats are preserved products, and everyone knows if you want to preserve food, large amount of salt, and maybe some sodium nitrite will be involved. Cured meat or any preserved food products for that matter, will NEVER be healthy.

    Bottom line is, if you want healthy, fresh non cured meat is the way to go.

  • The American diet is a real killer and the leading reason why we have some many diseases in this country, as well as the lifestyle we lead in America. The American medical community wants us sick. Once we as individuals change our eating habits and lifestyles we will see real cures to diseases both physical and mental. "You are what you eat"! Try it! The only thing you'll lose is pounds and fatigue....unless one enjoys being fat and tired all the time.

  • but choose people, will you choose cured meats which have longer terms in effect compared to uncured meat which have shorter terms in effect (i.e. botulism from Clostridium botulinum) which can be deadly in a basis of an hour or so.

    N-nitrosoamines and nitrosomyoglobins are risky when consumed, but moderation still is the key. the FDA issued a 500 ppm limit for nitrates and 200 ppm for nitrites, any more of these limits can be risky. Nothing to worry about, coz this is maintained by industries.

  • Refrigeration still has thresholds in keeping the microbial load low. Perfect reason why preservatives were discovered. I'd rather have miniscule accumulated cancer risk from nitrites rather than die within a few hours due to botulism.

    There are pre-cooking treatments done to cured meat to wash off nitites, remember, nitrites are still ionic even the nitrosamine molecule, so it can be washed off with boiling.

    Here in the Philippines, botulism deaths are near to none! Beause we boil the first!
