Those are the trim wheels, you use them to trim the aircraft manually, however, they are never used during normal procedures because there is a trim tab on each of the yokes.

V1 is takeoff decision speed, below this speed you can reject for engine failure, fire, or you think the aircraft just wont fly. Above V1 your going to continue the takeoff in a any case because the dangers of rejecting at such a highspeed on the remaining runway is more dangerous then continuing on one engine. V2 is best rate of climb single engine. They call this out to know that in the event an engine fails they have already reached the best rate of climb single engine speed.
It represent that the plane is now entering the high-speed portion of the takeoff. After 80 knots, the situations that will cause an aborted takeoff are reduced to only severe circumstances (engine fire/failure, the plane just will not fly). It also gives the pilots a chance to cross-check their primary flying display that they are showing the correct (and same) speeds.
@comcfi When they report 80kts, the pilots crosscheck the airspeed indicators to make sure they're both working and giving the same speed readings. This is crucial because taking off with a malfunctioning airspeed indicator could be quite disastrous lmao.
Shelia was my F/O on a Calgary-Toronto flight I few once. She was greeting us at the door, and my God, if more F/Os looked like her...I'd sleep easier on planes!
BTW, she and I shared a joke on arrival in Toronto that she looked like Brenda Song from The Suite Life...she joked and told me that "oh yes, I'm London Tipton's alter-ego: the smarter, less spoiled alter-ego!"
