i noticed that too. i think it may be because when they record in studios they have many different chances to undo their mistakes. so some bands i think play fast so if they make a mistake it will be hard to notice.
I've played in front of people live. You jsut play faster...I don't know why...it just happens. Probably adrenaline or just being kind of nervous in front of a crowd.

Energy. Bands get pumped, forget time signatures, and do things ultra-fast. Great example of this: David Bowie.
