Another GREAT way to finish cooking the frittata is to make sure you use a heavy iron skillet. You can actually finish cooking it in the oven with the door slightly open insttead of covering it on the stove top or trying to flip it. I was shown by an Italian chef how to just cook it on the stove top and then move it into the oven for the final part of cooking it.
