you really shouldnt use a glass cutting board. you should have learned that in culinary school. anything harder than the steel of the knife is gonna destroy the edge. stick to plastic for best knife life, or wood for best overall sanitation and life (yes, wood is cleaner than plastic, food myths on foodnetwork proved it)

i'm not using glass cutting board. That was a plastic disposable cutting board.

Wood cutting board is the best for sure but if only its cleaned and taken care of properly.

Plastic cutting board is less hassle and cheaper. :)

Also i keep my knives sharp at all times.

That is called shocking when you put it into bolling water, but let the veg. sit in ice water. We called that an ice bath in Culinary Arts, that keeps the veg. color nice & bright. Another example, when you're cutting apples, have lemon juice near, that stops the fruit from oxydizing & turning brown.

@rickames Lol, i didn't know it was going to you because i didn't look at the name it came from. But shocking is what it's called & putting vegetables in water keeps the color. And the apples in lemon juice keeps the color the same, take care.
