@Coconut241127 I actually have never tried using just water. I think it would work as long as you make sure it's a good seal. I usually use the flour paste or an egg wash just to be extra sure about the seal because I hate when egg rolls break open during cooking.

@bennie408 I usually find them in the refrigerated section of the vegetable/produce area at the grocery store. In many stores they're near the refrigerated salad and dressings or the refrigerated vegetarian stuff like tofu and soy hot dogs.
i'm not 100% sure, but i'm guessing it might be because the wrapper is made from an egg-based dough or maybe because some people use beaten eggs to seal their egg rolls.
