  • ok well i made the dough according to your posted recipe @ the beginning and i dont know if i misunderstood or what but in the video it dosent look like 3 cups of water your mixing in the beginng...6 cups of flour for 3 cups of water was so wet i think i had to add 3.5/4 xtra cups of flour... and go by feel. the dough seems good now but i had a mound of it so i split it into 2 parts and letting it rise now. what i do wrong here?

  • This is a great recipe. A really refined end product.

    After I make the bagel shape I let them rest and rise as much as possible. Sometimes overnight in the cooler or in a warm place for an hour or so. (crucial to have non stick surface or cornmeal and give them plenty of space to grow). Jumbo bagels are the result after boiling in water. Bake as normal. Just my own variation.

  • @starrychloe There's a ton of variations out there. The malt makes it a little sweet, but really, if you don't add it, it's a bit more like bread. Still delicious!

  • um22w22...all bagels are boiled or simmered in hot water before baking. That is what makes them different from other breads/rolls/donuts/pretzels, etc...

  • The best part of making bagels is the kneading. I do it for about 10-15 minutes and it's so relaxing, kinda zen.

    I have to get an unglazed tile for my oven, I want to try bagels on stone rather than a metal pan. I'm sure it'll make some sort of difference.

  • you can top them with nything like jam butter peanut butter and chease and even use them to make sanditches. sometimes here we use a bagel and make a pizza on it. you must know about that. there is a great way to try a bagel. makin git into a pizza. oh and timhortins is a canadian thing. it is a coffee shop that sells donoughts mostly .

  • tim hortons bagels are not as good as homemade ones. at least go to a jewish baery and get the real thing. if there is no jewish bakery go to a polish or eastern european bakery. montreal bagels are the best. i have a movie of my bubie makingthem in teh 30's (well its not a vide, but a real film)

  • Next time, add a tablespoon of baking soda to the boiling water for a more flavorful crust. Also, yeast is a bit much. Oven temp should be 500, then turn down to 450 after placing bagels in oven to maximize rise. After 5 minutes, turn bagels over. For maximum flavor, let freshly kneaded dough in fridge overnight, then let rise next morning.

    My quandry:

    I made bagels (quite succesfully - for a first). I was using Nigella Lawson's recipe and there was less yeast and less water - the dough was quite dry. How long should i be poaching them? as they came out a little to stodgy for my liking.

    Any comments would be appreciated.

  • add a tablespoon of sugar to the water you "poach" the bagels in, go about two minutes a side. dry them on tea towels. when they are dry, brush a "wash" of egg white and water, one egg white to 125ml water.

    you might consider a little more water. cheers.
