Oh yes, I also use my laptop to play this game so it makes it a little more difficult to play with the touchpad

I to am another person that is having trouble getting the expert goal on this level.. I came so close and was like 100 points off. You are right about that. You gotta chain the things you do. That's what I did on the last level in the first restaurant where the expert goal is 10,000

I'm a dude and don't worry, I'm not that good at the game either. The trick is to chain your actions together. Seat four tables at a time. Take all their orders one after another (chain). Serve their meals all one after another (chain). Take their bills all one after another and same with picking up all the dishes. Repeat process over and over again. Paying attention to seat colors is good too as well as seating the noisy cell phone businessmen away from everyone else.
