I get that a lot because of the sound, it's a 7.3 though. I guess the headers give it the different sound. Sounds even more like a 6.0 now with the bigger injectors (see vid of 12.18 quarter mile run).

Some where in the 750-800 range. I haven't dynoed mine but my buddy dynoed his and hit over 730 and my truck's heavier, quicker, and was faster when we were both running 37" tires.
man that truck is my idol i have an early 99 with some minor mods to it, bully dog 4 bank chip, afe stage 2 intake, wicked wheel, big head waste gate, custom oil cross over, custom crank case vent, 6.0 intercooler, southbend dual disc clutch. aluminum intake plenum with custom cold side IC pipe to fit the plenums it does alright most i've gotten on the dyno was 398 and 800 ib/ft torque i'm trying to decide either the dual HPOPS or the beans single high pressure oil pump what would you suggest
If you don't plan on going up to larger injectors or anything the single should be fine. And Bean's a good guy. I've got the Terminator dual system on mine and love it. Neither will give much more PEAK hp, but it really flattens out the power curve. Definately worth the money, especially if you tow.
And that's some pretty good numbers for those mods you have listed; good job!
