The chicken was not fried, the pan was coated with a squirt of olive oil and the pan was sprayed with PAM non-fat cooking spray. The action of frying food would submerse the chicken IN OIL.... as you can see, the pan is dry..... its just to make the chicken golden brown.
You could accomplish the same thing by coating the chicken with egg and breadcrumbs and baking it in the oven.
This recipe reduces the fat content and calorie content of traditional vat fried chicken parmesan.
Feel free to add or change the recipes.... you could always add some italian seasoning to the chicken ..... to zip it up... or try hot pepper flakes!

Came out good, except the chicken was a little bland. I think next time I will season it better before I bread it! Thanks for sharing though
