  • Very good stuff, I brewed it by your recipe here, but doubled the recipe, ended up with about 2 and a half gallons, I got anxious and tried it 7 days into the brew, delicious stuff, gonna wait for 3 days for the rest of it or until it stops fermenting. Great stuff nonetheless, my question is, if I want to double the alcohol content, would that be as easy as doubling the sugar and yeast?

  • Is it possible to add vodka, rum, or store-bought commercial wine to give the mix a little extra "kick"???

  • ive been using these brewing caps wich just attach to normal 3litre plastic bottles. there called pat macks homebrewing caps its the same idea as this thats what got me into brewing. just waiting on my coopers micro brewery coming in the mail. youre videos are great you are a real inspiration.

  • you should activate the yeast not shake it in ... use a bowl quarter cup of hot water.. add the yeast... let it foam leave it a good hour then ad it.. and stir it in gently with a long spoon or something

    also to clear it.. you can use gelatin a buck for a back at the brew store... and buy a pack of wine yeast or or champagne yeast like 50cents a pack

  • Thanks for the info, I just purchased my yeast, raisins & juice. I will be trying Ocean Spray's Cran-Grape with cane sugar (It's all I've got at the moment). I'll let you know how it turns out.... oh and don't worry about "dturco5938" and his comment regarding 15:44, he's probably fishing for male porn and got upset that this is about inmate brew! and not inmate sex! -LMAO

  • Thank you for the raisin thing. I seem to have heard of that somewhere, but it didn't sink in until now. So far, I have had no problems without it, but if I do have any, I will know what is missing.

  • I made some regular sugar wine(straight to the basics) and it seems to be doing well. It seems that the liquid may have lost some volume. also does freezing increase alcohol content significantly or just like 1%. do you use any fining agents or is that just for show?

    I made a similar mixture about 3 years ago and left if behind my boiler to ferment, the trouble is that I forgot all about it after a tragedy so had a busy time getting back on track, earlier tonight I remembered it was there and although it looks reduced and brownish, I am wondering if it is still ok to drink? thanks in advance

  • @CraigTube Hi Craig, well I ended up giving it a try, when I poured it out it looked like vomit, all lumps and stuff, I diluted it down a little with some red wine and It was actually delicious, was a little like stilton cheese though in the background, however I am still here;-)

  • I started fermenting a gallon of orange juice, I must not have put enough wholes in the condom i'm using because it was blown off from pressure, when i was sleeping. It was probably off for at least an hour, is there any chance the brew will be ok?

    and i mixed about 1-2 spoonfulls of 91% isopropyl alcohol to about 1 cup of water.

    my homebrew dont smell like rubbing alcohol to me.im just worried the fumes got in he brew.but i dont see how cause it has been pushing out the gases .

    i started this 8 days ago thanks to this video.i just smelled my homebrew wine and it smells really strong...

    i put a lil alcohol (rubbing) in my airlock (bottle with tube method) i dont know if that could b why but i only had it like that for 2 days.

    its still bubbling so i am confused cause it smells strong.

    is it ok to drink or do u think something is wrong?

    Love your vids. Is there any way to store this longer than a week? Obviously freezing it would work, but what if I wanted to give a bottle to someone as a gift? If I bottle it, I need to let the pressure out daily, correct? So that wouldn't work too well. If I freeze it, then it can't go back to room temp. or it would go bad, correct? Basically, storing this at room temp is not an option? Thanks

  • Table sugar and bread yeast comes out tasting.. well kinda like burn, but i stalled mine in the fridge for a month [to clear it actually,but kind of a happy accident] the burn mellowed and it became sweet [and see through clear]

  • Hi Craig, just found you on youtube and I live in S. Ont too! I was wondering if you added a little cinnamon and nutmeg could this be like a Christmas Cranberry wine, especially with the date/raisin juice added? Kind of like the cranberry sauce you have with turkey? What do you think?

  • One big question before i get started, I'm planning to try this at home in a big glass container -10lt or 2.642gal with a plastic airtight lid, on the lid i will make a valve (think of those sportdrink bottles where air/water pressure only goes one way) will this make due instead of a liquid-based airlock?

  • @tulachkon As long as the gas can escape you are fine. Restricting air from getting in is a good idea, but the act of the gas escaping through a small hole is enough to prevent that.

  • Oh I used wine yeast that I bought at save-on-foods too.

  • I picked 10kg of crab apples, juiced them, put the juice in my fermenter, then filled it up with store bought pure apple juice with a couple cups of brown sugar. After a week I racked it to my secondary fermenter, then let it age for a month. It is by far the best thing I've ever brewed. I don't think it's going to last very long.

  • Hey Craig, great video! Was just wondering if you think this same process would work with apple juice instead of cranberry cocktail? Or do you think it would turn out closer to a cider then wine?

  • @jasonachris I don't believe I did hydrate the yeast, I just put it in the juice. To make it stronger, add more sugar, but use wine yeast.

  • i live in a tropical region,the temp.is 96 in day time and in the 80s at night.if i store this in the garage how long will it take to ferment?

  • @Mr19dave75 I think 96 may be too hot for the yeast. You'd have to take some steps to bring that down a bit. How long it will take depends on the juice and yeast.

  • oh and im not sure if this has been addressed yet but if any would be brewers out there are having trouble getting your bubblin started try proofing your yeast first, instead of just pouring it in mak a half cup of warm water with a teaspoon of sugar in it. pour the yeast in and wait till it starts foaming(a few minutes if your yeast is viable) then add the cup to your solution. this way you will know for sure your yeast is good and doin its thing

  • i love your video, ive been making wine using this method for just under a year now. only i use welches frozen concentrate, latex gloves work as well as condoms although not as sterile, also the smell of brewing wine this way is sometimes a little offensive, for that i get a plastic bin with a lid(not airtight) maybe about 16 gallons or just big enough for all your bottles and snap the lid on. this also helps keep the temp more constant if your house temp changes between night and day...

  • @CraigTube thanks. Is it tricky, I tried it to day but I have no idea if it worked. I put one sheet of gelatine in a little hot water and melted it, then put the mixture into my inmate brews second bottle. I´m just working in the dark. only know that gelatine should work somehow.

  • Can you not just throw in the raisins or do you boil them to ensure it is sanitised?

  • @GhostGuitars Good question. I boil them to get more juice out of them and to sanitize them. There might be some stray yeast attached to them.

  • today im gonna put on a gallon of wine. im gonna use mccain old south frozen grape juice. actually the ingredients are listed as grape and apple (concentrated juice). it says no artificial flavours so im hopeing it'll work. ill report back once its done. nice videos by the way.

  • Craig luv the vids you are the man getting people into brewing. I have done this inmate brew and now I have a question. I need to sweeten it up a bit and want to know can I just and some juice to it? I have already froze the brew and thawed it out but needs to be sweetened any advice?   • @BookedL15 I would try adding some sugar to it. It shouldn't ferment anymore since you froze it.

  • In my Opinion It is easier to just start with the white wine Craig was drinking. The wine kits come with all of the ingredients and everything pre-measured and the equipment starter kits can be found for a around$60 all inclusive. The only tricky part is tracking down and cleaning the first 30 empty bottles. I have a couple 1 gallon jugs sitting here empty and I think im going to try a cheap "supermarket" juice wine with them but honestly it looks like more work then the kits, which are veryeasy

  • I once used an attachable shower head tube for the seal (you know the type that push onto the taps with the flexible rubber seal) boil the seal and tube., sealed it with a wod of blu tac and put the other end of the pipe in a water bottle. worked fine

  • Hey Craig I did this same exact thing and my fermentation was done in 7 days is that normal? I have since switched bottles racking it onto some gelatin. I can not wait to see how it works out even if 7 days was too short but the balloon was limp.... Thanks for the vids you do a great job..... Tom

  • @brewmaster0507 you dont know? get a piece of metal, bend it and jam it in an outlet, put your mug of raisins and water up to it so the waters touching the metal and it boils the water. but dont touch it directly or you could get electricuted

  • Craig, you say that adding sugar increases the alcohol content, granted but Ive heard that different types of yeast can survive different alcohol tolerances and that is why bakers yeast will very rarely give you anything above 5%. Whereas brewers yeast is good for 10% and champagne yeast will not die until it is living in a 20% alcohol concentration and turbo yeast even higher. Thoughts?

  • @shaunsemails I think he's just showing that it's possible to make alcohol with supplies anyone can get. But, I just picked up a little pack of champagne yeast and will give it a go.

  • @glockerotica I just noticed in Craig's video entitled "Tasting Fo's Inmate Wine and Hard Cider", he said he did try champagne yeast, but the yeast fermented the juice to bitterness, and he prefers the sweetness of some sugar left; like a wine cooler.

  • @SudsY1979 I haven't used that. I would stick with regular yeast. I tried quick rise yeast and it didn't work. Is that the same thing as turbo?

    I am making home made wine using your method. Are there any risks and dangers involved in drinking this ??? I read an article that an inmate died in Kingston ONT in 2008 from drinking inmate brew. I just want to get drunk and not die in the process.

  • First off, thank you for posting this video. I made a batch exactly like this and it turned out perfect. Yesterday i decided to go bigger since the last batch turned out so good. I done the steps exactly the way you said but instead of one gallon i used three, in a 5 gallon bucket. Now the only problem is that its not fermenting...at all, the seal is good, yeast is an older packet(red star pasteur champagne), and i cleaned everything like a mad man. any suggestions would be awesome. thanks again

  • craig, hi there again joe her ein ireland..im laughing at this video a lil because i am a prison officer in an irish jail and its just how they do it.except a lot of them dont have an airlock on them and when we find their stash the bottle they use is about to explode....so when we see them taking a arm full of oranges back to the cells we know in about 20 days ro so to look to the hooch....good video

  • Craig I have a question for ya. If I wanted to make a larger batch in a container such as a large water dispensing container, would that be possible or is it a must that you make small amounts at one time just like the ones you made?

  • I'm finishing off my second batch using this method. I have a couple questions for master brewer Craig. What all juices are amenable to this method? Have you ever tried brewing bock beer?

    I ask because I'm considering making some hard pineapple and bock beer for the summer. If you have any suggestions they are welcome and will be greatly appreciated.

  • @0lAllan I haven't tried all types of juices. I'm told that citricy juices like orange juice don't taste so good. Best thing is to try a small batch and see how it turns out. The yeast can get a bit fussy, I know that much.

  • Hey Craig. My girlfriend & I are just getting into home brewing. Your videos have been really helpful. Great work - keep it up. Thought you might be interested to know an Aussie company called OzTops has a $25 kit for just this sort of brewing. Yeast enough to make 75 litres of wine from fruit juices right in the bottle. Also comes with patented reusable lids (2 types; to fit juice bottles & soft drink bottles) with built in airlocks in 3 carbonation strengths. Might want to check it out. Cheers

  • Hi there. I've just made up some apple juice inmate brew. I was just wondering, Is what you call 2 cups of sugar about a pint? I reckoned my measuring jug is about the same size as yours, so that's how much I used.

  • I use 100% frozen grape juice with no sugar added with 1/4 teaspoon of bread yeast. It has 39 gms of fructose per serving. Place into 2L plastic apple juice container to make my 1.5L batch.

  • I'm sure it has been mentioned, but a little FYI is that inmates don't have "corn sugar" (they save up sugar packets until they have enough), and they definitely would not have Baker's Yeast. Instead, they usually smash up bread with some water and use the water from that.

    I know it's minor, but if you're going for accuracy, that's how it's made in prison.

    I just finished making some inmate brew. Instead of using raisin ( juice or extract ) I was going to mix in a yeast nutrient before adding the yeast. But instead I grabbed the wrong bag and added a gelatin finning. Do you think this mistake will kill the yeast? After I had the airlock on ( for some time) I realized what happened I went back and added the yeast nutrient. Any thoughts?

  • Why not use grape juice instead of cranberry cocktail? Wouldn't that eliminate the need to boil raisins? I can't picture inmates having access to cooking equipment needed to boil the raisins and dates.

  • @CelticDeathKIA But then again, their brew was only around 3% abv. For the inmates, the yeast nutrient may have been in the bread. Who knows, just brew :) The cranberry cocktail was dirt cheap btw, unlike the pure grape juice.

  • @pitlord07 After you freeze and defrost the wine, add some water with dissolved knox gelatin to the wine. It will help the yeast settle in the bottom of the container. It turns out amazing.

  • @pitlord07 heat up a cup of water on the stove (under boiling but too hot to drink) then add a half tsp of gelatin powder to the water while stirring. It's important that the water is not boiling and that you slowly add the gelatin. After it's dissolved into the water you can let it cool. Honestly since the yeast is already dead (and should be) you could pour the water into the wine. It could take a couple days to clear but it is MUCH faster than it clearing on its own.

  • @pitlord07 it will but only a little if you're making a gallon or more. after it has settled, siphon the wine into bottles just try not to disturb the yeast

  • This reminds me of something similar my brother & I did with pumpkins called "skidrow scotch". The flavor took a lil gettin used to,but it did the job...Try makin apple jack,using the hazy cider you get in wax cartons. I used to be able to get this un-filtered cider around here for makin my version.

  • @WIN545 Hey, not sure if Craig or anyone else got back to you about that so figured I'd answer. Any fruit juice should work fine. Just remember that since a lot of the sugar is converted to alcohol the resulting flavor is going to be a little different than you might expect. Grape, cranberry, peach and strawberry are delicious. If you have an airlock on it, when the bubbles start coming really far apart, or if you are using a balloon/condom, when it starts to deflate it should be about done.

  • @pitlord07 YOu have to be careful with that. Too much sugar can produce methanol, which can make you very sick or even blind. I can't recommend you add any more sugar, or try it at your own risk.
