Some tricks will come easier to you then others and still, some people can rotate their wrists ( wrist movement) as if twirling comes naturally to them. Yeah, they are in this video. That's because the longer the poi the more time you have to more your body with through-wraps, otherwise yeah, you have to really move your arms fast. Try it with really long poi and you'll see you don't have to move so quickly.
what kind of poi do you recommend? i have some poi that I ordered online, i like them but they are the kind that stretch so sometimes i find it a bit hard to do things because they stretch. Should i try to find diff poi or what do you think?
I totally think you should so long as you can afford it. I've got many sets of poi, and it's only through experimenting that you can find what kind of poi you like and suit your spinning style, as everybody's different. I personally prefer really long, really heavy poi that are stretchy, so socks like the ones seen in this video are perfect for me. But yeah, if it doesn't feel right for you, keep looking. I actually have different sets that I prefer for different things...
I have a set for throws, a set for stalls and planes, a set for isolations and through wraps, and they're just my practice poi, I've got different sets for different effects with fire, and different sets for different effects for daytime spinning. If you don't want to fork out the cash, I recommend trying other people's poi, I'm sure they won't mind. Or, just buy different lengths and types of socks and differently weighted balls and see what combo works best.

I don't think I've made any tutorials, but there are certain variations that I feel I've come up with (although I'm sure others have done them before I have, I came up with them independently.

I can't bring my self to bring it behind my back when I'm doing it forwards.
I can do it fine going backwards but I can't get it to unwrap when I try to bring it back while going forwards. What am I doing wrong?

thats a good thing to do when your not doing anything fancy, and you can even make it look fancy!
