@surferboy36O He was using a ND filter, or nutrial density filter... the purpose is to be able to use a very fast lens (wide aperture) without over exposing, it is basically just a very dark filter.
I have been on allot of sets with allot of different DP's and enjoyed this presentation... good job! Never worked with any producion using a DSLR, so this was interesting for me.
I agree some slight movements add elegance to the shot, but i personal don't have a crane like that or a steadycam, so till i'm able to use my schools steadycams and cranes next year, i'll just shoot from handheld/viewfinder and OS lenses, or my tripod.
One question i'm new VDSLR work . . got a 550d with a few bits . . . but want to get a matte box . . . but i don't understand how you can focus with it on as on my lense the front ring moves forward when focusing . . is just because it a zoom lens or do you just have a material neck with a gap between the lens and matte box
he said it was a 5D and one can clearly see a 7D at 4:40, then at 9:51 he says a 25mm lens on a full sensor... guess a little mistake there, still a great video, thanks for sharing.

Else it's to much movement to be subtle.
