@k8jcr Well, when they paint the clay surface with iron oxide, it creates a surface that has a high contrast when it is carved. Without the iron oxide their carved lines would not be so distinct. Also, the iron oxide interacts with the glazes that they use.
@SophhStar I don't think it was paint, it was probably a slip of a different kind of clay or a glaze. You couldn't put regular paint in a kiln, it would disintegrate.

They use iron oxide, which is basically rust, to paint the tiles before they carve them.
