Hi, Thanks a lot I made it today. It was great!! I am from Kerala, Both Plantain and Casava (we call Kappa) are in plenty here. Kappa was brought here 200 years ago by Portugese (from South America as they found a common climate). But people in Keralal never had any food by mixing these two.

If you use the flour version then you wont need to blend it.The mortar and pestle are used,remember,to pound the starchy food items to apowdered like consistency.However,since they have already been boilesd they are not powdery but just starcht as they have absorbed water,Some people use the powdered form,add water and put it in a micro wave--I do not recommend this as a microwave changes the texture of the food.Rather,I prefer to add some water to the powder and cook till done,

In P.R. we have a dish called mofongo and it consists of fried plantains that are mashed with spices and chicharron and formed into little balls and served with fried pork and broth. Its so delicious but its alot of work. But like I said if I had the mortart and pestel in this vid it would be great!!
@themetalmonkey OOOOH that sounds nice - I'm gonna check that out. The giant motar and pestels can often be found outside West Africa in communities where many West Africans live. they are even sold here in Amsterdam and London - but they ain't cheap.

In my country we make Fu Fu (or Sadza in my language) with maize meal.You take about 2 cups of maize meal,making a paste by adding 2 cups of water then stiring it to the boil while adding more and more maize meal till it is a very thick,but it has to be stired constantly/vigorously with power and effort.But the traditional way of making it is more of a process.
a friend of mine in college had a nigerian boyfriend and watched his roommates make fufu with corn meal. they let it soak/ferment over night and the next day cooked it. it was amazing watching him with the canning pot and a big wooden stick form 4 perfectly smooth balls. they did not serve individual bowls they had one plate with the fufu and a bowl of stewed pigs feet next to it, it was a communal eating thing.
