@KayteeLola I think strawberries would be good, but you'd want to bake the shells longer in the first round, and the bake the whole tarts less in the second round. If you weren't allergic to peaches, that would be my first choice. What about nectarines?

I made these with my friend yesterday and they were quite good :) I do have a question though. When we made the goat cheese mixture, it was a bit liquid-y. Do you have any ideas on how to fix this?

@scribbleXpages Sure! Either use a little more goat cheese or cut back a bit on the lemon. You could also chill the mixture a little before you use it - if you do that, make it about an hour ahead of baking your pastry shells. Glad you liked them!
@101pllfan If you do substitute it, I would suggest using Ricotta cheese first with a little extra lemon juice. But if you go with cream cheese, add a pinch more salt. Really, you can't substitute the tast of goat cheese since it's so unique, but at least that way you get a similar texture.

P.S. My librarian asked about the apples, we live in Ohio, and don't really have a variety. lol. Would normal apples work fine? She's just making them for herself, and she doesn't care it there a little off. Thanks and write me back!!
@JamesDurbins1stfan Glad you liked them!! As far as apples go, Honey Crisp apples would be a good substitute and are more readily available than Pink Lady or Cortland. I'm in Indiana though, and was able to find Pink Lady apples. If you can't find either of those, I suppose you could use any apple, but the flavor wouldn't quite have the same strength. In that case, then just don't use Granny Smith :)
how on earth do you know how to make them...??? does the book have recipies in it???? I wouldnt think a book would take the time to describe that kinda stuff...??? you must of had to look highe an low to find out how to make those or you guessd or the book says sumthin about it i dont know

@101pllfan I baked mine with wax paper underneath because I didn't have parchment paper, and it worked great! Just make sure you don't have any extra wax paper that overhangs on the cookie sheet :)
@ukfswmart The creamy mixture is actually pretty stinking thick, so spooning it out is difficult to do without it getting everywhere. Believe it or not, I did try that... and I had a lot to clean up afterwards :D

I should have made fewer biscuits when I did mine, there were way too many for me. xD (Also, Pink Lady apples are some of my favorite snacking apples! :D Soo goood.... oh, and Honey Crisp apples would probably make a good substitute if you can't find Pink Lady! ^_^)
