The gray colour is the Surfacer (or Saafeisaa, like the Japanese name it).　Afterwards he used black for the edges in order to receive a shading effect for the first color layer.

You paint it Grey because it is a primer but i don't know where you get black from. You are probably refering to the color but it is always primer first(grey)

primers or surfacers for these kits are used to see more easily imperfections on the surface of model kits. and then also to help the first layer of paint to adhere to the surface better
