The only way they could have an ending is kill off Jack in the story. So why not have an ending where Jack lives and is still on his search for whatever he is looking for. That way in the future the story can continue, and no good charaters are killed.

There will be a new movie, which is only about Jack and his quest for that treasure on the map in the last scene (I can't remember the name) it says so on THe POTC forum, and Disney confirmed that it will be released in late 2009 after Prince Of Persia. Also, there will be a series following Jack's adventures before Curse Of The Black Pearl :)
