It's not just you, Goron. I've also noticed that the appearance rate for hearts seems low in this game, except in certain places (such as how jars at the beginning of a dungeon usually have hearts). I'm surprised those Red Chuchus that you beat up in this episode didn't drop any at all. I often get hearts from them.
