It is both, the actual one is Zanpakutō, it is pronounced as Zanpakto, but yeah if you don't know how to pronounce Zanpakutō, it is Zanpaktou.
In the word Zanpakutō, the first u is not pronounced and the ō is pronounced in a specific way. ou = ō, though ou is not pronounced ou.
