i made this for christmas...it was amazing....i had soaked fruits and nuts for over a year in rum to prepare this cake....i recieved so many compliments for the cake :) :) ...to me this cake tastes much different from the regular plum cake/fruit cake we get in kerala....but i loved this cake more than the traditional kerala plum cake :D :D :D thank you guys!!

It seems very delicious. I want to bite as hard as I could. But, the voice was not caught easily. BGM was too larger than the voice. I think you should improve the recording environment. - とても おいしそうです。 思い切り かぶりつきたいです。 しかし、声が聞き取りにくかったです。 BGM が声に比べて大きすぎます。 録音環境を改善するべきではないでしょうか。

Butter is approximately 75% fat and 25% water. 8 ounces (2 sticks) of butter can, thus, be substituted by 6 ounces of oil, and up to 2 ounces of water -- since oil is more aqueous than butter, 2 ounces of water will produce a moister cake; if this is a concern, you might want to reduce the amount of water added.

You can substitute applesauce for butter. We've never tried it, but you could probably use some orange juice to soak the dry fruits. Let us know if you try these changes and how the cake comes out.

I changed my oven recently to a convection microwave. I baked this cake in 180 deg for about an hour. Even after that i did not get a clean tooth pick. Same thing happened when i tried making sponge cake, Either it becomes hard like a rusk or it will not be cooked properly. Anyone has any idea on how to use this oven?
Rum or brandy is used to soak the cake after it has cooled down. It is optional and since the cake is not cooked after that, it will still retain the alcohol content.

Lemon/orange peels are seasonal so they may be available in grocery stores during Christmas time. However, you can even make them at home. If you can't find them and you don't want to make them, you can definitely leave them out.

Yes, rum and brandy is alcohol. The alcohol is gone from the cooking process but the flavor will remain in the cake. It is optional to use it.
