  • i made this for christmas...it was amazing....i had soaked fruits and nuts for over a year in rum to prepare this cake....i recieved so many compliments for the cake :) :) ...to me this cake tastes much different from the regular plum cake/fruit cake we get in kerala....but i loved this cake more than the traditional kerala plum cake :D :D :D thank you guys!!

    That is the authentic recipe but you can certainly leave it out.

  • @Gadah1000 The alcohol evaporates or cooks out leaving only the flavor. At least that is why my friend said and he is a Chef.

  • Its a very common recipe here in Kerala especially during X'mas... You dont go high on that bit of Rum added to it.... :D I must tell it taste really grt.. But we add sweetened dry papayas to it and dried cherries sometimes

    You can try to substitute the eggs with flaxseed powder. Please see our tip tuesday video "Egg Substitute".

  • It seems very delicious. I want to bite as hard as I could. But, the voice was not caught easily. BGM was too larger than the voice. I think you should improve the recording environment. - とても おいしそうです。 思い切り かぶりつきたいです。 しかし、声が聞き取りにくかったです。 BGM が声に比べて大きすぎます。 録音環境を改善するべきではないでしょうか。

    You can leave it out.

  • @roxy42lover Any time you cook with alcohol, the heat used in cooking removes the alcohol but leaves behind the flavor. So you don't have to worry about getting drunk off of it or anything.

  • The powdered sugar or icing sugar contains corn starch and helps with the texture. Adding lemon juice to the sugar/water mixture prevents it from crystallizing.

    We have a huge amount of asian people along with carribean, african plus every nation from all over the world in the uk, and have their native foods and ingredients too!

  • Butter is approximately 75% fat and 25% water. 8 ounces (2 sticks) of butter can, thus, be substituted by 6 ounces of oil, and up to 2 ounces of water -- since oil is more aqueous than butter, 2 ounces of water will produce a moister cake; if this is a concern, you might want to reduce the amount of water added.

  • You can substitute applesauce for butter. We've never tried it, but you could probably use some orange juice to soak the dry fruits. Let us know if you try these changes and how the cake comes out.

  • Yes, rum and brandy is alcohol. The alcohol is gone from the cooking process but the flavor will remain in the cake. It is optional to use it.

  • I changed my oven recently to a convection microwave. I baked this cake in 180 deg for about an hour. Even after that i did not get a clean tooth pick. Same thing happened when i tried making sponge cake, Either it becomes hard like a rusk or it will not be cooked properly. Anyone has any idea on how to use this oven?

  • You mentioned that rum is optional. In the video where do we use it? Just for cooking the nuts?

  • Rum or brandy is used to soak the cake after it has cooled down. It is optional and since the cake is not cooked after that, it will still retain the alcohol content.

  • Lemon/orange peels are seasonal so they may be available in grocery stores during Christmas time. However, you can even make them at home. If you can't find them and you don't want to make them, you can definitely leave them out.

  • Unfortunately, butter is butter - no matter which brand you use. Just eat a smaller piece of cake :).

  • I never use alcohol for any purpose( food still taste good:) maybe u can substitute it with vanilla extract, cider,lime juice,ginger ale?

  • Not knocking the video--because I love you all, but I just want to say that I find fruit cake so funny...It's so popular during the holidays, but it's hard to find many people that really LOVE fruit cake...it almost seems more like a traditional thing than something people really LOVE. Actually there was a video sort of about that...search "foodrants" on youtube...the video is called "The BCS Sucks"
