  • This looks like a cool recipe, and I'm going to try it, since my mother's allergic to raw apples. It was hard to listen to it with the dueling banjos in the background, though. I kept having the urge to cover my butt with one hand (lol).

  • Well you should cook them for the full 5 minutes each stage, and they will be tender, so the raw will be gone, as fer the banjo, well thats a different story ha ha

  • nope..the heating of the whisky burns off the alcohol

  • Actually, No. It doesnt burn off the alcohol. To burn off a good chunk of the alcohol, it needs to be at a certain temp. for a while. This usually applies to foods that are fried (beer battered fish) or using wine to deglaze pans for sauces. These are exposed to temperatures upwards of 400 degrees for a fair amount of time. Even then, its very hard to burn out all alcohol.

    A low boil will not remove all the alcohol from food, especially for only three to 3-5 min. Its sort of like heated cider.

  • Because, the knife and your hands are coming into contact with the skin AND flesh of the apples. Though you're not eating the peels, if you don't wash them, dirt and pesticides that remain on them can be transferred to the flesh of the fruit by way of your hands or knife.

  • These look *Great*. Hooch apples were one of my favourite treats growing up, especially hooch-apple pie(Although the apples got really soft after being boiled and then baked, but we still loved it :P)

    Now, a Q for you: The hooch apples I recall were covered in a dark, sticky syrup.. any idea what that was? Just cook the liquid down into a reduction?

  • I have cooked it down, you can almost use like a syrup. My preference is to keep the apples firm, so I tend to cook on the least time, but the pie sounds wonderful!
