The bigger issue is the upper vent. The Big Steel Keg fixes the BKGs biggest flaw - the divets (or little concave cuts) on the top grill. The lower vents for all practical purposes are the same.
You can get a thn rat file and create the divets in your Bubba Keg - it just takes some time and patience. I have a dedicated bullet smoker I use for 10-12+ hour cooks, but I have plans to modify my Bubba Keg upper vent, and use one grill for everything.
I use a full starter chimney of lump, BBQ galore charchoal. It lasts the whole 18 hours without going out. The BBQ Guru helps. Wrap the butt or brisket about 8 hours in, and you can cut it with a spoon. I have read that the bubba keg isn't sealed as well as the BSK, so you may be loosing heat there?
Cool video. I have a Bubba Keg(older version), and I do 4-7lb shoulder in about 6 hours or so. Do you notice any difference doing them 18 hours? Also, how many times to you restart the fire? I use very little lump and consistently flame out in about 3.5-4 hours.
Which BBQ guru adapter did you use? There isn't a big steel keg one...there's a primo, kamado, big green egg, grill dome, meadow creek, etc....

The big green egg and BSK are very similar. I traded the nanoQ for the digiQ dx. The digital readout is definitely helpful
