i was having the same problem with 3gs 4.1 BB6.15.00 it always loose service and sometimes the wifi disabled. what i did was reinstalling the same 6.15.00 baseband using redsnow it did solved the problem for like 5 days and after that same...... try it.

Following steps will hopefully get your iphone working. I have iphone 3G 3.1.2 firmware.

Fixed, I tried everything and nothing worked. Disabled 3G, removed SIM with Airplane mode on and off, restarting the iphone, everything.
what really worked, was restarting it with 3G disabled and Wi Fi, and network settings restored, SEVERAL times.
On the 10th time it worked, couldnt belive it, disabled 3G, restored

I had the same problem with mine.. I had installed Ultrasn0w. When I rebooted there was nothing but searching and No Service.
I uninstalled Ultrasn0w through cydia and that fixed it.
Cydia > Manage > Packages > Ultrasn0w > Modify > remove > confirm.. I think thats the steps.

Same problem.
It went from sometimes loosing service, to no no service at all.
I've tried blackrain, redsnow, snowbreeze...nothing seems to work.
3g is off.
3.1.2 FW, downgraded the baseband with fuzzyband too.

@cameronj279 seems you might have upgraded to 3.1.3. If that is the case then you need to downgrade to 3.1.2. through jailbreak.

Heres a solution.
Go to settings > Network > Turn off 3G!!!!!
