When a liquid touches a surface that is much greater than the liquid's boiling point, a vapor layer is produced under the liquid and lifts the liquid slightly from direct contact with the heat source. And thus, that is why you still see water. The water will still evaporate but it would take a much longer time.

Hours... lol uh... no the air at the bottom of the pan is heating also and will heat the drop(s) from the side and top as it rises out so even though they're being suspended by steam emission from the bottom they will still lose their water vapor at an accelerated rate and be gone long before HOURS. lol

This is caused the Leidenfrost effect. When a liquid touches a surface hotter than itself, the liquid evaporates, yes? Well, the pan here is so hot that the water evaporates into water vapour and the vapour is what's keeping the water up. Due to the layer of water vapour keeping up the droplet, the water skitters around.
