A phenomenon in which a liquid, in near contact with a mass significantly hotter than the liquid's boiling point, produces an insulating vapor layer which keeps that liquid from boiling rapidly. One sprinkles water in a skillet to gauge its temperature-if the skillet's temperature is at or above the Leidenfrost point, the water skitters across the metal and takes longer to evaporate than it would in a skillet that is above boiling temperature, but below the temperature of the Leidenfrost point
The mystery to this puzzle is the Leidenfrost effect. When a liquid touches a surface that is much greater than the liquid's boiling point, a vapor layer is produced under the liquid and lifts the liquid slightly from direct contact with the heat source. And thus, that is why you still see water. The water will still evaporate but it would take a much longer time.
the water burning so fast makes a cushion of gas lifting the water blob so it doesnt all burn away fast.....you can do this wit liquid nitrogen on the ground and your floor too
Hours... lol uh... no the air at the bottom of the pan is heating also and will heat the drop(s) from the side and top as it rises out so even though they're being suspended by steam emission from the bottom they will still lose their water vapor at an accelerated rate and be gone long before HOURS. lol
This is caused the Leidenfrost effect. When a liquid touches a surface hotter than itself, the liquid evaporates, yes? Well, the pan here is so hot that the water evaporates into water vapour and the vapour is what's keeping the water up. Due to the layer of water vapour keeping up the droplet, the water skitters around.

It is because when the pan gets hot enough, the water creates steam that lifts the water, the water doesn't get touched until the steam goes away. Then, it starts again.

I once burned a pan, and when I picked it up, the bottom separated, and molten metal spilled out onto the linloeum. Luckily that did not get on me. So, you don't want to let your pan sit tooo long.
