They never make clear what happened to Vincent after the final battle.

Woder why they didn't!? Does he die with the Castle or what!?

It's just left unanswered. If you abuse certain items you can fight a vampire Vincent, but I'm not sure it's him since what kind of vampire can use Holy Water as a weapon?

In any case he's just never referenced again after finally meeting him and getting the key from him.

It took me countless tries to defeat him

He got some cool attacks, especially this Fireballs that explode end the huge Shockwave XD
