i do not understand why you consider this a "lost symbol"..
it is clearly wheat. just look up "wheat symbol" in google pics and you have your symbol..

but isn't that a silly question compared to:
Who had the ability to manufacture those calendrical calculations
at that time?

it is easy to find out what the half missing symbol was since the text is comprised of a group of identical symbols.
