Classic ink is dye based ink. It's super quick drying--dries to the touch almost immediately, which is very good for stamping. But it's not waterproof, so this wouldn't be a good choice if you wanted to watercolor the image you stamped.
Craft ink is pigment based ink. It stays wet a long time. This is a great ink when you want to heat emboss something--as the embossing powder will stick to the wet ink, then you heat. Craft ink is waterproof after it has dried or heat embossed.
