I usually sprinkle them off the day before and let them dry before I cut them. Just easier. But you can rinse them right before you start chopping as long as they're dry - otherwise it's hard to chop herbs when they're wet. ~ Rita

I assume that you wash the herbs when you gather them and then lay out to dry on towel, Right??
