Bobby, how did you pump the bucket of ice water through the wort chiller? did you have a two stage set up with another copper coil in the ice bucket? i couldn't tell.

What kind of DME was that and how many pounds did you use? I use Pilsen Light for all of my brews and steep 1lb of crystal malt(for the flavor) w/ about 1-1/2 cups of roasted malt(for darkening). I tend to enjoy O.G. brews of about 1.045-1.050

I just pitch dry yeast and it starts bubbling in only a few hours. I can't see the reason for making a starter, seems like more possibility for contamination. I'm going to do an Oktoberfest with liquid yeast for the first time. We'll see how that turns out, its only my second all-grain.
I don't know that I'd use a liquid lager yeast without making a starter. The cell count is just so low especially for a cold pitch. I don't think anyone would suggest making starters with dry yeast though. 11.5 grams in 5 gallons is PLENTY of yeast.

Just keep in mind, the beer you'll make at first is not going to be very good. Don't get discouraged. Pick up a beginner 5 gallon kit. The two essential items are carboy fermenter and a bottling bucket. I'd recommend a 6 gallon "better bottle" for about $20.

It's actually a cardinal rule of brewing. I'm moderately paranoid compared to most. Anything that touches cool wort must be sanitized. Look for Starsan, Iodaphor, Onestep, etc.
It depends on what yeast they supplied with the kit. Every strain has its favored temperature range. Some lagers like to ferment at 50-55 while ales do well at 63-72. If it's an ale yeast, you'll have more activity in the mid to high 60's.

The chiller sanitizing in the boiling wort and the thermometer in a sanitizing solution and then in to the wort I don't quite understand.
Wouldn't you want to sanitize these items separately and then rinse under water prior to making contact with the wort?

I used regular garden hose water for most of the chilling, then I swapped over to a pond pump sitting in a bucket of icewater.

Use liquid yeast. Dried yeast is highly contaminated.
