  • @zaidoon7 heavy cream also known as a double cream or heavy whipping cream contain about 32%-35% fat, is not sour... hope this helps!

  • Usually, oil is used to increase the temperature you can cook butter, but in this case I'm guessing its for flavor.

    I wish I could get that cheese! I thought It would be a lot more expensive, and was happy to hear $9.00, but I don't think there are any shops in my area that would have it! I'll keep an eye out.

  • any kitchen supply store. you might be able to get a really cheap one from walmart but i don't suggest it. you get what you pay for.

    Cuz truffles are hella expensive. Chances are, the truffle in that cheese is chinese. Not that there's anything wrong with it, it's just cheaper and considered as low quality truffle.

    And at least use whole milk. Skim milk?!?!? come on, people.

  • If you use milk you might want to use a roux (equal parts butter and flour). Use only as much as you need. Try some nutmeg.

  • Just in case Chef John or anyone is wondering SottoCenere means under ash in Italian(stress is on the first syllable of cenere if you care :). Never heard of that cheese before but it's an interesting way of preserving the cheese.
