Could I use truffle oil and a good cheese to get a similar flavor? I can't find that cheese? I live in central BFE Texas... not cheese shops here... or maybe order it? Looks amazing!

Cuz truffles are hella expensive. Chances are, the truffle in that cheese is chinese. Not that there's anything wrong with it, it's just cheaper and considered as low quality truffle.

Usually, oil is used to increase the temperature you can cook butter, but in this case I'm guessing its for flavor.

If you use milk you might want to use a roux (equal parts butter and flour). Use only as much as you need. Try some nutmeg.
