  • @hleo2601 You're welcome! Glad you are enjoying the vids :) - Kat

  • Nice video. There is a case for using too fresh a coffee bean I gather.

  • @joeldamianicigan Yeah, you definitely need to allow for some outgassing after roasting -- generally recommended to be about 72 hours. - Kat

  • your videos are the most informative & interesting i've found on the web, thank you.

  • @KINGSWOODTOWN Thank you! Glad you're enjoying them. - Kat

  • Very interesting. Thanks. Love watching you two. You both work well together and definitely know your stuff! I'm new to the making my own coffee thing and have found your little shows extremely helpful. Thank you both vey much.

  • @Isagirl78 Thank you for the feedback! Really appreciate it and always love hearing when our work (and play!) is helpful for someone :) - Kat

  • I want to see Kat! Such a partner to Gail in the world of espresso but not to see her, is like a shot without the Crema!!

  • @Jeffmtbr I am too shy! I can only be as great as I am behind the camera ;) - Kat

  • Hi Kat and Gail. Great video. Very informative. Just bought an AeroPress. No crema but great taste. :)

And YES. Get Kat in a video too. :)

  • @digitaldolf Yeah, crema isn't part of the Aeropress story but I think I might personally be off the crema train and so it is an excellent coffee maker IMHO :D - Kat

  • @digitaldolf Nice to read other people use this simple yet amazing device to make coffee too. :) It's my daily coffee-making device, just love it.

Anyway, thanks for the info about crema, it's very informative and complete.

  • @TyrosCenva Yeah, the Aeropress is great :) Glad you found the video helpful. - Kat

  • Won't crema have a better effect on an espresso than an Americano?

  • @turbochargedbrick Not sure what you mean by 'better effect'?? - Kat

  • MORE VIDS MORE VIDS MORE VIDS! :D

I really enjoy watching your videos! :P

  • @skoredreng We've been doing about 1 per day -- hopefully that will sate you! :D - Kat

  • @skoredreng Ha - That would be way too much information for you, believe me! ;) But really glad that you are enjoying them! - Kat

  • this is the most important video as the whole idea of good coffee is the creama

  • @Malangsufi I think it's part of it, but not essential to good espresso. - Kat

  • I wanna see Kat, I wanna see Kat, Kat Kat

  • @abcborgess

    You never gonna see Cat.

    She is like Banksy. 

  • @abcborgess You'll just have to come to the store (and hope that I'm working there that day!) ;) - Kat

  • If you want to make an Americano with no crema, do you scrape the crema off or do you cut the shot(s) short?

  • @WaterBarleyHopsYeast We removed the crema after the fact with a spoon. - Kat

  • Ciao from Trieste, the city of Illy and coffee in general, where I am probably the only person making coffee at home. Everyone else gets it in the bars! I've been told also that the percentage of robusta in the mix adds crema. Illy 100% arabica won't give much crema. Can you conferm that? Are you using 100% arabica in the videos or a mix?

  • @izoard77 We usually use either Velton's (which is 100% Arabica) or Lavazza (which is a mix -- more heavy on the Arabica than the Robusta) but I'm not sure how the Robusta plays a part in crema. There's likely a difference since each type of bean has a different natural fat/sugar content, but not sure how Robusta compares to Arabica. - Kat

  • Also, I agree ladies with your comments and observations about "no/low crema". Taste is the only thing that counts. I've been roasting my own beans for years, and the amount of crema from batch to batch will vary. But bottom line, if the TASTE is there, I'm as happy as a sailor in a whorehouse with a credit card - crema or no crema!!

  • @watcherjohnny Ha - that is a great whorehouse that accepts plastic! I think that people focus too much on the crema and it isn't necessarily the end all/be all of a good shot. - Kat

  • Very interesting stuff. Thanks gals!

  • @watcherjohnny Glad you enjoyed it! - Kat

  • OK Kat ... first off Grammy is so SMART! :) She knows her coffee. Second ... unless you're in the witness protection program we need to see you in a video soon!!!

  • @winelover215 Well she owns a espresso-shop-thingy, correct?

This coffee channel makes me want coffee cake D:

Yea, even if I did get an espresso machine, I couldn't get good beans. We don't even have local butcher or cheese shops (I don't consider the chain-supermarket a butcher...) and it would be hard to find a good store for beans. The best I could do is try to order them unroasted and try the popcorn-popper method. No grocery-store coffee for me! I had root beer float bubble in my cappucino

  • @kragier and that is why I must go to an illy to get a real cappuccino. I hate the 500 character limit, it is so restricting for ranting people like me...

They even had really, really stale coffee in the cappuccino, it was extremely bitter D:

  • @kragier There is this thing called the internet for buying beans ... and express shipping too! Check it out. :) I just got beans today from California to PA roasted just 2 days ago. :)

  • @ComplexEspresso That's what I meant by order uncooked beans, but I would feel a little.... cliche? if you bought roasted beans online, I don't know why, I just would.

Either way, I don't currently on any espresso/grinding equipment, bu the reason I am interested in learning about coffee is because there is a pretty good chance I may be able to get the equipment in early 2011. If I do, I am ordering from SeattleCoffeeGear here :>

  • @kragier Well I am excited for you to get your equipment! :D And when you do, there are a lot of options for you to get coffee sent to you online, as ComplexEspresso says, so you don't have to suffer with poorly/old roasted coffee ;) - Kat

  • @winelover215 She is smart! I keep telling her that but she doesn't believe me ;) And I will be in our 1000th video :D - Kat
